A restaurant can place very different demands on partitions only metres apart. Dining-room walls primarily serve architectural and decorative functions, while kitchen-side surfaces may encounter elevated humidity, grease residue and repeated cleaning. Identifying these exposure zones before construction allows the substrate and finished wall system to change where operating conditions actually change.
Food-service walls meet floors in areas where routine cleaning can introduce water and cleaning solutions near the partition base. Gypsum edges should not be left as exposed, absorbent surfaces at these interfaces. Base details are coordinated with durable finishes, coves or other specified sanitation components so the completed junction can be cleaned without repeatedly wetting an unprotected gypsum edge.
Restaurants frequently combine painted gypsum with FRP, tile, stainless steel or other washable surfaces. Gypsum products approved by the FRP manufacturer can provide that backing in appropriate locations. Moisture-resistant drywall is designed for elevated humidity and intermittent moisture—not as a universal substrate for walls repeatedly saturated during cleaning. Areas exposed to frequent wash-down may require a different approved wall assembly or substrate. Separating these conditions prevents moisture-resistant gypsum from being specified beyond the exposure limits established by its manufacturer.
Walls that receive frequent wiping need a surface system capable of tolerating the intended cleaning procedure without prematurely degrading. Where painted gypsum is appropriate, the primer and coating system should be compatible with the selected board and expected maintenance. More demanding sanitation zones can transition to FRP or another specified washable finish rather than relying on paint alone.

Commercial kitchen exhaust systems can occupy substantial space above cooking areas and pass through or beside interior partitions. Drywall framing must respect the required duct route rather than forcing mechanical components through improvised openings. Establishing these pathways before enclosure also prevents later cutting that could weaken framing or leave poorly supported gypsum edges.
Water supplies, drainage piping and other plumbing services create numerous penetrations through food-service partitions. Openings are sized closely around the service while allowing any specified escutcheons, sleeves or sealants to complete the interface. Oversized irregular cuts are avoided because they create unnecessary gaps that are harder to finish and maintain around frequently cleaned surfaces.
Stainless-steel wall panels, corner guards and other kitchen components require a flat, stable substrate and predictable termination points. Gypsum and adjacent finishes are coordinated with the thickness and extent of the stainless system so exposed edges do not produce uneven steps. Required reinforcement is incorporated before enclosure where components will be mechanically attached.
Valves, cleanouts, controls and other components requiring future maintenance should not become permanently buried behind completed drywall. Access requirements are identified before boarding so appropriately located access panels can be incorporated into the wall system. This allows routine servicing without cutting through washable finishes and rebuilding the partition afterward.
Not automatically. The required wall surface depends on the equipment, heat exposure, sanitation requirements and applicable construction documents. Areas behind cooking lines may require stainless steel, tile or another approved protective finish over a compatible substrate rather than exposed moisture-resistant gypsum.
Moisture-resistant products are designed to perform better under elevated humidity or intermittent moisture, while mould-resistant products use facings and cores formulated to resist mould growth. Some panels provide both characteristics. ASTM D3273 is commonly used to evaluate mould resistance, but even a score of 10 does not make gypsum waterproof.
It can be appropriate in some locations if the FRP manufacturer approves the gypsum substrate and the wall is not exposed beyond that assembly's limitations. Adhesive compatibility, substrate flatness, moisture exposure and installation instructions all matter. A dry food-preparation wall and a frequently saturated cleaning area should not automatically receive the same substrate.
Pipes, conduits and other services can leave gaps where they pass through finished walls. Poorly detailed openings create ledges and crevices that are difficult to clean and can collect residue. Close-fitting penetrations finished with appropriate sleeves, escutcheons or compatible sealants create more maintainable interfaces around food-service areas.
The correct termination depends on the wall and floor assembly. In areas exposed to frequent wet cleaning, leaving an absorbent gypsum edge vulnerable at floor level can lead to deterioration. Details may instead incorporate coved bases, protective finishes or other specified interfaces that separate the gypsum from repeated cleaning moisture.
